Jaguar went to great lengths to design the I-Pace the way they did and gave us a concept that doesn't seem too far off from what would typically come to production, although this will be the very first of many EV's to come from JLR.

If there's anything that will help you appreciate its design, aside from high quality videos and seeing it in person, these photos will accomplish just that.

I think this has been mentioned before, but the center console is very clean in their concept with minimal knobs and buttons aside from the bare essentials that you'll use on a daily basis. Also like the open cubby for all my junk to go into.

Main concern is the odd drive selector, they did away with the conventional stick and it looks like two buttons now.
Really love the start-stop button on the steering wheel. But I also do like how clean the center console is. I don't mind the drive selector buttons however. Think it's kind of cool and techy so it fits the I-Pace beautifully. Wonder if there will be wireless charging integrated into that cubby area.
Lucky for you a lot of what's seen here are in current Jaguar and Range Rover products, even Land Rover, on top of that this being sort of like a new page for Jaguar... it will have certain things unique to it that other JLR products won't have.
Looks like the passenger dash area comes with a drawer? Maybe they want to turn that side into a kind of office space for working on the go.

For when the autonomous driving steps in, you have you're own office space on the go. There should be an outlet kicking around there so you can plug in your laptop or tablet or whatever.
I think Jaguar will tone down the interior to look similar to the F-Pace with smaller knobs for heated seat adjustment. Maybe more blue LED for the electric car feel.
Fortunate for us they have been testing the E-Pace, at the rate things are moving at, odds are we'll see the E-Pace before this. That being the latest iteration of some CUV/SUV from Jaguar will provide greater insight.
The E-Pace will definitely be a nice sneak peak as to what we can expect (in certain aspects) in the future I-Pace.

General center stack layout looks similar to the I-Pace, mainly the two knobs and large infotainment screen. If it's shared between the two models, maybe that's what we'll really see in the production I-Pace.
I really like the simplicity of that whole center dash/console area. The right step by removing all of those unnecessary buttons and having it all integrated into the infotainment system. Less clustered looking, very clean and classy.

At this rate with how complex even the simplest of systems are it should be a big shock we get even a handful of buttons, just look at Tesla.

I think one of the next steps is to offer controls through APPs on our phones. I don't know about you but remotely starting my car, setting the temperature, etc. all while i'm walking up to the vehicle sounds like a good idea. It's going that route.
BMW already has that going on and I think Genesis (IIRC) is getting into that system as well? Genesis will be using an App, I think BMW has a system that you do everything on the "key fob" itself.
Some automakers already does that with their vehicles. The tin foil hat wearing me wouldn't use it anytime soon, but there are options out there. SOme even uses those smart watches on top of the app option like Genesis.
I don't mind it... what's the worst that can happen? We already use our phones for much more sensitive information so it's just a great push in convenience.

Then you look at the "Fate and the Furious" trailer and see some super villain take control of all the cars through the air and send them driving into each other ;)
Interesting how the I-Pace design could come full circle; the Velar is a new crossover based on the Jaguar F-Pace and now we're discussing the possibility that the I-Pace is based on the Velar.

Jaguar -> Range rover -> Jaguar

Both new concepts feature three digital displays so they're probably keeping that in the production model.
